Hello Entrepreneurs! I was hoping to find somebody with experience starting a coffee trike business (selling coffee from a custom cafe on wheels like this). I'm exploring the idea and think it will be a hit in my area (greater Boston area). I plan to start simply with iced coffee & cold brew on tap, and more than likely hot coffee in carafes as well, and potentially expand to espresso drinks and snacks as well if permitting allows.
A few main areas I have questions about:
1) My hope is that I can sell brewed coffee that was produced by a local/regional coffee roaster but I'm not sure how to go about doing that... is a formal business agreement between the vendor and the roaster required or can I just buy their coffee beans and brew/sell it, all while displaying "Serving locally roasted coffee from XYZ Local Coffee Co" (and their logo)? I have a few favorite roasters and would obviously research and sample before settling on one or more of them to feature in my menu, but I'm not sure they would bother with a small-time operation like a coffee trike if anything formal was required. Any direct experience would be greatly appreciated!
2) I'm trying to get a sense of what sort of training (food safety, CPR, etc) and licenses are required for simply selling coffee (and possibly other cafe items) as a "mobile food vendor". Unfortunately my town's Board of Health website is basically just a bunch of links to forms and there is no general guidelines or checklists specifically for mobile food vendors. I plan to contact people on the board but I'm looking for feedback/advice to get a better idea of the general questions I should be asking etc.
3) Related to #2, how mobile is a vendor like this really allowed to be, typically? My town has a very active bike/walking trail that spans many neighboring towns and it would be ideal if a permit could be had that would allow me to post up along the trail or even ride the trail and take stop requests. I have a feeling this arrangement is unlikely and that they will want to only give permits for selling from very very specific places and during specific time windows. Initially I'll be pursuing permits for my town but hope to expand to nearby towns and events soon after.
