Restaurant management compensation/schedule entrepreneur how earn by blogging blog

Hey there,

I'm currently in the process of starting a scalable chain of restaurants. I am developing the management structure, and I am weighing the ideas of how I will compensate and schedule my management team.

I am trying to decide whether to build the schedule around a 5 day a week or 6 day a week schedule. I would compensate appropriately if I did go with the 6 day schedule(20% greater salary), as I would be more efficient with hourly labor by having greater managerial overlap.

I'm wondering what works best with this industry from others experience. I know 6 day schedules are not uncommon for the restaurant industry.
