SEO = low demand, high supply or low supply, high demand? earn by blogging adsense income

I'm quite new to SEO, I've been learning about it and actually am about to land my first SEO internship. But I've been just curious about the competitiveness of the field...is SEO an actual field where there is low demand, high supply or the other way around where there's low supply, high demand? Is it a highly sought after skill that's NEEDED right now or is it something that a lot of people are seem to be doing right now that makes the competition so difficult? i know SEO is not rocket science or some highly complicated skill that requires years and years of studying but i'm just curious to know what the competition is like these days in 2017 and if a lot of people have "SEO" as their skills and how important it's regarded...especially from a business perspective. thanks.
