For ecommerce with 2 or 3 items, how do I lay out site for keywords? (+ blog) earn by blogging adsense income

I'm still in the testing phase but getting closer to going live. I've read a TON in the past two months but nothing that quite answers my question. I understand I should basically pick one keyword per page (whether homepage, a product page, or blog post) and optimize for that.

But I will have 2 or 3 items that will cover most any situation within the niche. So surely I'll want a blog as well since 4 keywords for an entire site can't be good, but my questions:

1. How crucial is it to select my keywords for items 1, 2, and 3 right now? ie could this be changed later if I find out my sub-niche that would want item 2 is wrong?
2. Would this be about how to layout a site? Examples. I lay out like this:
   Homepage keyword "one two"
   item 1 keyword "one two for three"
   item 2 keyword "four twos"
   Blog post 1 "four two" which points back to my item "four twos"
   Blog post 2 "one two for five" which internal links to items
   etc etc?
3. If as I said my 2-3 items can solve multiple problems each and could have many different keyword sets each, how can I go about attempting all sub-niches at once through google results? Would I effectively have like 10 (nearly) identical landing pages for the same item but optimized for the keyword variation? So navigating the site via the home page sends you to one of those versions but the other 9 landing pages are just kinda "floating" there if that makes sense, waiting for a google search of that page's keyword? How can this be achieved and what would this look like? Without direct links from the outside (probably) to a free-standing landing page and the only way to them is from Google search, how well could something like this rank anyway?

Any other visual layout/keyword related information that might help that'd be great too. Thank you guys!
