Domain name change. Redirects? Help! Google is still indexing old site earn by blogging adsense income

Hi all! I need some help. We have an old site that we redid. The domain changed. It is an exercise site. I said we should have created a redirect spreadsheet htaccess. The developer says that all we need to do it say old website go to new website and we don’t need the spreadsheet. What is best practice? Will google slowly drop the old site pages from the search engine and push the new site?
