SEO Portfolio earn by blogging adsense income

I was curious what an SEO/inbound marketing portfolio would look like. I am just starting out and am doing pro bono work for two non profits and will be applying for SEO jobs in a few months.

I want to put a portfolio together but am not sure what I should/shouldn't have. Any advice would be welcoming.
