Drop in rankings on new site launch. Why? earn by blogging adsense income

So we have launched a couple of new sites recently, replacing age-old ones that have been around for years. However on both occasions we have experienced a drop in rankings and aren't sure why.

We have 301 redirects in place yet the drop still occurs. What else could we be doing wrong to cause this? I feel like from the offset of a new site design we are missing steps fundamental to retaining the SEO already there, but aren't sure what those steps are...

Any help or guidance would be much appreciated so we can start our redesign and development process on a much better foot!
